At Biarte, we don't do a French roast because we believe that this roast, characterized by its shiny black beans and an oily surface, masks the best flavor characteristics of the bean. The drinker tastes charred notes and a bittersweet taste that many feel gives them acidity. For these reasons, we do not go as dark as a French roast with our beans.
